I use Morrowind Rebirth (balances the game a lot better), and I roleplay my characters without grinding, plus I always set difficulty at 100 - for me the game is most fun like that, when you're creating and playing a beliveable character. But just play the way you feel it's more fun, for me it's fun when the game is always kept challenging. I even like to use console commands to make the game more balanced (I lock my current character at 80 fatigue for instance - he should have over 300 which is way too much for my character, and I'm locking the health to levels that feel more 'fair'. It's my story in the end after all:D). Only you can find the proper gameplay balance that you will enjoy, and you can just make some tweaks underway to your playstyle if you find things are too easy or too frustrating in the end. If the player were to wander around an Ancestral Tomb at level 1, they'll encounter Ancestor Ghosts and basic Skeletons. At Level 20, in the same tomb they'll encounter Bonelords and Skeleton Champions.Similarly if a player were to come across a Daedric ruin at level 1, they'd encounter Scamps and Flame Atronachs. At higher levels 20+, they'd encounter Golden Saints and Dremora Lords, though in addition they would still encounter some low level Daedra as well.At the same time though, Human enemies (e.g Bandits) are the same level and have the same gear no matter what level the player encounters them, and the same goes for animals such as Nix Hounds and Cliff Racers.But yeah: Just about any character should do ok assuming that they have some combat ability even if that's just a giant pile of scrolls.

Min maxing isnt terribly important to create a survivable character, and high level gear is generally powerful in the hands of an unskilled character. Better to play naturally unless you have some skill/ability goal that you'd like the character to aim towards!
